Roasting a pig is the traditional way to celebrate Noche Buena, or Christmas Eve. The Three Guys from Miami have been roasting pigs in the United States for more than 20 years. Raúl is the true master of the pig roast! He learned the art of the pigroast from his father and father-in-law in Cuba.

For the past seven years we have been showing people all over the world how to roast a pig using the "Three Guys from Miami Method." To date we have had nothing but positive feedback!

Don't let the thought of roasting a whole pig overwhelm you! We make it easy to get great results with our step-by-step instructions. We've received many letters from people who couldn't believe how easy it is and how great the pig tastes.

The Night in Which a Girl Succeeded in Catching King Melchior

I remember when I was very young; the Feast of the Magician Kings was the most anticipated day of the year, since on this day many times your dreams were made into reality.

The night before we always cut grass for the camels. I thought that the camels really liked the Cayo la Rosa grass, because they always ate all of it!

Although we were a little nervous with expectation, on the eve of the Kings, we always went to sleep early. For me, the most memorable gifts of the Feast of Kings happened one year in which I wanted a bicycle and some cowboy boots.

However, as always, my parents told me that this would be difficult, because the Kings had to bring gifts to so many children. For that reason, I only hoped to receive one of the two things.

To my surprise, the following morning I found, at the foot of the little Christmas tree, the bicycle and the boots! (more) Full Article

It's That Most Wonderful Time
of the Year!

Hmm, these guys look familiar...

It's time once again to start planning your holiday celebrations. This is the year to do it up right and celebrate a true Cuban Christmas.

The Christmas celebrations in Cuba were very similar to those in the United States. On Noche Buena, Christmas Eve, the families would gather together and have a GREAT feast. Our families are very large and there was always an abundance of food.

For Cubans, Noche Buena is all about family and friends, a time to celebrate life with good food, good music, and love. It is truly the most beautiful and heart-warming celebration of the entire year.

The roasted pig was always the main attraction. Along with the pig, we had black beans, white rice, yuca con mojo, salad, and of course lots of Cuban bread.

In the days before Christmas Eve, all the women would start preparing desserts. Popular desserts included orange and grapefruit shells (cascos) in a heavy syrup and buñuelos -- a type of fried sweet dough with powdered sugar and syrup. (more) Full Article

The Art of Jonas Gerard

One Miami area artist has really captured what beauty remains in contemporary Cuba. Jonas Gerard was born in Morocco of French and Brazilian descent, but he has the good humor of a Cuban!

We recently attended "Cuba The Heart of It" an exhibition of Gerard paintings in Coral Gables.

Working with thousands of photos of Havana, Cienfuegos, Sancti Spiritus ,and Trinidad De Cuba, Gerard renders beautiful scenes in both oil and acrylic.

We were very impressed with the style and artistry of Gerard's work. Although we usually don't encourage any travel to Cuba, we must admit that Gerard is capturing images of Cuba that may otherwise be lost.

Three Guys Put on a Cooking Show at Burdines

We cooked two large paellas for the Sunday after Thanksgiving crowd at Burdines Dadeland in Miami.

Burdines has a great kicthen facility and we were welcomed by customers and staff alike!

The Three Guys with Burdines Professional Chef Luci Rosende.

We gave out plenty of free samples -- wow, did they go fast! We never even got a taste!

Thanks to everyone who came and spent two hours with us, cooking paella and telling stories!
