New product spotlight: the Tostobueno tostonero
Then you place a now softened plantain chunk in each of the two cups and close the lid. Special dowels on the opposite side of the masher press against the plantain and form it into a cup. Then fry the cups once again in hot oil -- just as you normally would -- until the cup is golden brown.

We were very impressed with the quality of the Tostobueno. Unlike many tostoneras we've used in the past which tended to be made with cheap pine, the Tostobueno is made with bamboo, a very smooth and hard wood that should last a long time in your kitchen.

When we were doing the photography for "Three Guys From Miami Celebrate Cuban," we got the idea to make several tostones cups to dress up one of the plates. We tried to do it the old fashioned way -- cutting a fat plantain and hollowing it out with a knife. Our results were not very photogenic, and we scrapped the whole idea.

If only we had the new Tostobueno tostonera! This ingenious plantain smasher actually mashes and forms the plantain into a perfect little cup, suitable for stuffing. You cut the plantains to fit the bottom slot on the Tostobueno and take them through the first frying step as you would a flat tostón.

We had the opportunity to conduct a Cuban cooking class at Ariana's Etiquette and Culinary Arts School in the Pinecrest neighborhood of Miami. Ariana has been in the business for more than 22 years teaching the culinary arts in Miami and hosting many celebrity chefs over the years.

Just 23 Days until Noche Buena
Each year Raúl holds a big Noche Buena party in his backyard. The roasted pig is always the main attraction. Along with the pig, we have black beans, white rice, yuca con mojo (mojo is a type of marinade with garlic, onions, and sour orange), some salad and of course lots of Cuban bread. Raúl is the true master of the pig roast! He learned the art of the pigroast from his father and father-in-law in Cuba.

For the past nine years we have been showing people all over the world how to roast a pig using the “Three Guys from Miami Method.” We’ve received many letters from people who couldn’t believe how easy it is and how great the pig tastes.

And every year we receive dozens of photographs from all over the globe from people who have followed in Raúl's footsteps and cooked a pig for their own celebration.
