Merry Christmas 2008!
Now is the Time to Start Planning Your Noche Buena Celebration!
For us, there is only one way to celebrate Christmas Eve, and that's by roasting a pig! This is a very old tradition in Cuba and one that we have continued here in Miami.

We start early on Christmas Eve day, setting up the roaster, starting the charcoal, laying out the pig and of course, enjoying a beer or two and plenty of snacks as we watch the pig roast the day away.

Each year our master of the pig roast, Raúl ends the day by putting the finishing touches on another perfectly roasted pig. The skin is brown and crispy, the meat so tender and juicy -- this is a true Christmas gift!

Although Christmas celebrations in Cuba were similar to those in the United States, a special thing happened each year on Noche Buena or Christmas Eve.

Families and entire neighborhoods would gather together and have a GREAT feast. Cuban families include grandparents, uncles, brothers, second, third and fourth cousins, and basically anyone you've ever met who liked your jokes and complimented you on your food.

Noche Buena parties are very large and there is always an abundance of food! Noche Buena means Good Night. For Cubans, it's all about family and friends, a time to celebrate life with good food, good music, and love. It is truly the most beautiful and heart-warming celebration of the entire year.

The roasted pig was always the main attraction. Along with the pig, there was black beans, white rice, yuca con mojo, salad, and of course lots of Cuban bread.

In the days before Christmas Eve, everyone would start preparing desserts. Popular desserts included orange and grapefruit shells (cascos) in a heavy syrup and buñuelos -- a type of fried sweet dough with powdered sugar and syrup.

"Tony's Art Makes a Great Christmas Present!"

You may have also seen Tony's work on the cover of the Miami Hispanic Yellow Pages.

Tony works and lives in Miami with his wife, Lina, daughter, Sarah Amaris, and son, Daniel Felipe.

Tony was the winner of the 2007 Arte de America Hispana Competition and his artwork has been featured in Cigar City Magazine, The Miami Herald, Miami New Times, Cigar Snob Magazine, Vanidades, and Selecta Magazine. Tony also made an appearance on the PBS show "Postcards from Buster."

Much of Tony’s work centers on the daily life of vibrant Little Havana, the cradle of Cuban culture in Miami.

Tony’s style has been described as “Primitive Expressionist,” and he works mainly with acrylic on canvas. Tony has exhibited his artwork at galleries and shows throughout Florida.

It’s just not a trip to Miami without passing by the Sentir Cubano store on SW 8th Street and having your picture taken in front of the Tony Mendoza-crafted murals that line the walls.

The murals have become a real tourist attraction and thousands of people have taken a few shots of the wife and kids in front of this colorful artwork. The murals have even been used a s a backdrop for TV and print advertising, including a now famous spot for a car company.

Tony was born in New York, but raised in Miami’s Little Havana neighborhood. Tony’s simple and colorful paintings uniquely capture the spirit and vibrancy of Miami with a unique style and a great sense of humor.

Miami's Master of the Mural
Jamón ibérico may just be the ultimate ham. The ham, more properly called a jamón ibérico de bellota, (there are other types of ibérico ham, but this is the best) is made from the ibérico pig. The pigs are allowed to range free and, several weeks before slaughter, the pigs roam the nearby oak forests where they gorge themselves on fallen acorns. This diet and a dry curing process that the locals have used for generations produce this gold standard of hams.

It’s almost hard to describe the experience. The ham is rich with fat, much of which is monounsaturated and therefore healthy, like olive oil. Sliced paper thin, it is only moderately chewy and the fat dissolves on the tongue like butter. No matter how you slice it, it’s all about the flavor. Salty yet not overly “hammy” like most American hams, the ibérico has a subtle nutty taste.
