Salchichón is a Spanish-style salami sausage. Unlike the typical Spanish chorizo, salchichón has more garlic and no paprika. Salchichón makes a great snack with a slice of cheese and a piece of Cuban bread or a Cuban cracker. When the mood strikes us, we sometimes add a few slices to our Cuban Sandwiches. We find that this is a more authentic addition than the Genoa salami our cousins in Tampa typically add to their Cuban sandwiches!
