Marinated Olives
- 2 cups un-pitted green Spanish olives, drained
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 teaspoon ground pepper
- 3 cloves garlic, mashed
- Freshly ground black pepper to taste
- Peel of 1 lemon
- Juice of 1 lemon
- 1/2 teaspoon cumin
- 1/4 cup olive oil
Mix everything together in a glass bowl. Cover and refrigerate for a minimum of two days. Serve at room temperature.
This will keep for several weeks in the refrigerator.
