
Glenn: This is Raúl's favorite way to do potatoes on the grill.
Jorge: It's his favorite accompaniment to Salmon de Raúl. The bacon gives the potatoes a nice smoky flavor.
Glenn: It also helps keep the skins moist.
Jorge: We like to quarter and slightly smash the cooked potatoes after they are done.
Glenn: Sprinkle them with a little olive oil or butter and fresh chopped cilantro. Delicious.
Remove from foil and quarter. Sprinkle potatoes with olive oil, and fresh chopped cilantro. Salt and pepper to taste.
