Plátanos al Jerez
Sweet Plantains with Sherry

Raúl: Here is a great recipe for sweet plantains with sherry.

Jorge: If a recipe calls for ripe plantains, you need plantains that are black!

Glenn: They may look like you should throw them out, but under that ugly peel is a sweet treat.

Raúl: Ripe plantains are easier to peel than green plantains.

Jorge: For both varieties you can make the job easier by cutting the stem end off each end to get the peel started.

Glenn: Sometimes you need to slice the skin lengthwise to get it off.

5 ripe plantains
3 tablespoons butter
2 sticks of cinnamon
7 tablespoons of brown sugar
1/3 cup sherry
Peel the well-ripened plantains. Melt butter in pan, add the sliced plantain, add the rest of the ingredients and continue cooking over a low fire.

Cover and simmer, occasionally turning the plantains until golden brown on all sides. When they are browned and soft, remove from heat.

Remove cinnamon sticks. Allow to cool a bit before serving.

For a real treat, serve over vanilla ice cream!

This painting represents the dual culture of Cuban-Americans here symbolized by both the traditional espresso coffee pot -- for those cafe con leches -- and the ubiquitous American drip coffee maker, which is found in offices, work sites, and most American homes.

Tony has sold many of these at art shows around Florida. It is especially popular with Cuban-Americans who live this dual culture. Also a great gift for Cubans married to Americans!
