


“We calculated six hours of roasting,” Can der Linden says, “but after five hours the pig was well done. We kept it warm over the remaining coal waiting for our guests to arrive.”
The 72 party guests arrived at the site in 15 cars and a bus. Everyone gathered in the pagoda for a great feast.
“Everybody liked it,” Van der Linden adds. “The meat was wonderful and as you stated it came easily off of the bone. It was our first pig roast where no meat was left over!”

A party of 72 prepares to devour this pig -- in a Chinese pagoda, no less.
Van der Linden, a Belgian, has lived in China for the last eight years. The city of Beilun, Ningbo City is located about four hours south of Shanghai. It is surrounded by mountains -- an ideal spot for a great pig roast.
“At four in the morning we loaded our Jeep with 48 concrete bricks, a 114-pound pig, and 110 pounds of coal,” says Van der Linden. “Half an hour later we arrived at the place we selected, a nice Chinese pagoda next to a lake.”
