Liborio's New Orleans

We know that most people don't go to New Orleans to eat Cuban food! New Orleans is a great restaurant town and the name of the game here is either Cajun or Creole. You hardly ever hear anyone say, "I just got back from New Orleans and they have this great Chinese place there." When we've been in town we do what most tourists do: breakfast at Brennan's, lunch at the Court of Two Sisters, Dinner at Galatoire's.

Violetas Water

Cuban babies usually don't smell like baby powder. Instead, you're much more likely to smell the sweet smell of violets. Both girl and boy babies are frequently "baptized" daily with "Agua de Violetas." This is a tradition that probably goes back to Spain. In fact, most of the Agua de Violetas is imported from Spain.

With so much of the popular media about Cuba tending to whitewash the evils of Communism, it's nice to read a popular thriller by an author who's strictly ANTI-Castro! There aren't a lot of Cubans in the book, and most of the ones who do appear are evil government henchmen. However, it's an interesting story set in Miami, the Keys, and Cuba.

The action begins on a Cuban airfield as an American pilot takes off with a mystery cargo. The plane crashes in the Keys and the pilot is rescued by a former cop turned Hollywood movie consultant. Papas Fritas con Mayonesa

Mayonnaise on French Fries? We know it sounds like a bit much, but once you try this dish you'll become a convert. Papas fritas con mayonesa is a recipe that Jorge enjoyed when he was in Spain. It was served as a side dish at many restaurants, or as a tapas selection.

The potatoes are quickly fried in hot peanut oil, drained thoroughly, and tossed with a mayonnaise mixture. The result is a delicious creamy flavor redolent with garlic.... (more) Full Article

The big national chains are well represented in Miami. But why a waste your time at McDonald's when some of the best ethnic food in the country is available on just about every street corner? If you want to sample some Cuban food, but you're not sure what you want. Or you just find the menu at most Cuban restaurants intimidating. Go to a place where you can actually look at the food.

Many visitors to Miami are a little intimidated by the many walk-up windows serving Cuban snacks, sandwiches, and the ever popular Cuban coffee. For Cubans, sharing a coffee with friends is a social event -- a daily ritual! Learn a little bit about the traditions of drinking Cuban coffee and you will be quickly welcomed!

Café Cubano or just a "cafecito" is espresso coffee Cuban style. It is very strong and sweet -- the coffee actually drips into a little pot with several teaspoons of sugar. Cuban coffee is served in a small demitasse cup -- like a shot of espresso.

You'll also notice that most café take out windows provide cold water and paper cups. Some people drink the cold water first, to clear the palate, others drink it last to dilute the coffee in the stomach -- it's a topic of much debate.... (more) Full Article

When God made the world, he decided to give mankind two virtues so that they could prosper. To the Americans he made them orderly and respectful of the law. To the Germans, he made them tenacious and studious. To the Japanese, he made them good workers and patient. When he got to the Cubans, he told the angel: "These will be intelligent, honest, and communist."

When God finishes making the world, the angel gets his attention and tells him: "Sacred Father, you have given to all the peoples of the world two virtues, but to the Cubans you have given three. That will make them prevail above all the other peoples of the world."

"Oh!" said God, "That is certain, but as they are gifts of God, they should not be removed. We will remedy this. From now on, the Cubans keep those three virtues. However, to prevent them from prevailing over all the other peoples of earth, no Cuban can exercise but two of the virtues simultaneously."

It is for that reason that, from that moment, the Cuban that is communist and honest cannot be intelligent; the one that is intelligent and communist, cannot be honest. And the one that is intelligent and honest, will never be able to be communist!

Plátanos Maduros

Plátanos maduros are the delicious sweet fried plantains that are served with just about every Cuban meal in every Cuban restaurant in the United States. What many Anglos refer to as "those sweet brown bananas."
