Three Guys From Miami, the Next Generation?

Three generations of Musibay men: Raúl, Onel, and Gabriel dressed in their Sunday best for the recent wedding of Pedro Castillo (Jorge's brother).

Copa Cubana (a cup of Cuba) is a true family-owned enterprise. We find that that's a big part of doing Cuban food right – adding the secret ingredient that brings Cuban cuisine to its highest level. (That "secret ingredient" is a true love of Cuban food and the family pride that makes you always want to do your best!) Copa Cubana is located in Naperville, a suburb of Chicago.

The restaurant is very impressive with a lot of brick and stucco and the interior is nicely decorated with some beautiful paintings and pictures of Cuba. They have some wonderful appetizers including empanadas stuffed with lobster that are so flaky you'll wish you had room to eat several. Copa Cubana's signature dish is the ropa vieja. New Jersey's Hard Grove Restaurant

Dominic Santana is one wild, and crazy Cuban! This is a guy who really knows how to party! His restaurant/club, the Hardgrove Cafe, is one swinging spot. Santana has a great love for both Cuban music and American rock and roll. He and his wife Mercedes and chef Rafael Valdespino have re-created the feeling of a big Cuban party. All that's missing is a pig roasting in the corner!

The Hardgrove isn't just a great place to enjoy Cuban food. It's a great party atmosphere that makes a night out more of an event. The place is wildly decorated with metallic palm trees and a six-foot Statue of Liberty. Happy hour is big here and the place is noisy with conversation and laughter. Where to Find the Best Tamales

Walk into any small store or restaurant in Miami and you're going to find a real treat – tamales. Good Cuban tamales are made with freshly ground corn and the meat (pieces of ham or pork) is mixed into the dough. They are a great appetizer or side dish and three make a very filling meal all by themselves.

You can hardly go anywhere in Miami without seeing tamales on the menu. They can be purchased very cheaply, so much so that most families in Miami don't make their own because it's so much easier to buy them! Where to find the best tamales? This Month's Featured Artist: Celia Cruz

After more than 40 years of performing, the Queen of Salsa Celia Cruz continues to delight audiences around the globe. This prolific artist has recorded more than 70 albums including 20 gold albums. With her trademark cries of "azucar," Cruz is a living legend who took home the 2000 Latin Grammy award for Best Salsa Performance.

Great Time to do Churrasco on the Grill

In Argentina, where this style of cooking developed, churrasco actually refers to many types of meats prepared on the grill. But here in Miami, churrasco specifically refers to a cut of beef prepared in the Argentine style. You'll see it on the menu of many restaurants.

The churrasco is a long flat cut of skirt steak. It's typically marinated to make it tender and full of flavor. The Argentine version uses a mildly flavored marinade or sometimes no marinade at all. We like to "Cubanize" the dish by marinating the meat overnight in our own homemade mojo marinade.
