Remembering that many people who rode the ferry between Key West and Havana had a habit of dropping their empties over the side as the ferry pulled in, he hired a diver to search the sea bottom. The result is a huge assortment of decorative glass bottles now on display.
It’s almost hard to describe the experience. The ham is rich with fat, much of which is monounsaturated and therefore healthy, like olive oil. Sliced paper thin, it is only moderately chewy and the fat dissolves on the tongue like butter. No matter how you slice it, it’s all about the flavor. Salty yet not overly “hammy” like most American hams, the ibérico has a subtle nutty taste.

Unfortunately, the show was recently cancelled by Cox Communications which oversees the Travel Channel. There is currently a national fan-based letter writing campaign to bring the show back on the air.
