Cuban Meat Spreads

How to Make the Best Pastas de Carne


Cuban Meat Spreads – Pastas de Carne

Total time: 10 minutes
Yield: 4-6 servings

An all-purpose meat spread for crackers and fried bread rounds.

INGREDIENTS (Ham):

1 (8-ounce) package Cream cheese
2 tablespoons butter
6 ounces ground ham
1/2 teaspoon dried mustard
1/2 cup olives, chopped (green or black or both)
salt and pepper to taste
Let cream cheese come to room temperature. Blend together deviled ham with cream cheese, butter and dried mustard. Fold in chopped olives. Add salt only if necessary.

Variations:
2 cans (4-1/2 oz.each) deviled ham
1 pkg (8 oz.) cream cheese, softened
1/2 cup mayonnaise
1/4 cup finely chopped drained pimentos
1/4 cup sweet pickle relish, drained
Salt and pepper to taste
Mix all ingredients. Refrigerate several hours. Serve on crackers or bread.

Ham Version 2

2 (8 ounce) packages cream cheese
8 ounces leftover beef roast
8 ounces smoked ham
8 ounces cooked turkey breast
4 ounces sharp cheddar cheese, shredded
4 tablespoons butter
4 tablespoons mayonaisse
1 tablespoon prepared yellow mustard
1 teaspoon cumin
2 teaspoons garlic powder
1 large red pepper, roasted, cooled and diced
1/2 cup chopped black olives
Salt and pepper to taste

Let cream cheese come to room temperature.

Grind the meats in a food processor until chopped fine. Add cheese, cream cheese, butter, mayonaisse, mustard, cumin and garlic powder. Blend well. Fold in chopped olives and roasted red pepper. Add salt and pepper to taste.

Refrigerate several hours. Serve on crackers or bread.

INGREDIENTS:

Pasta de Carne y Queso – Cuban Meat and Cheese Spread

Pasta de Pollo – Cuban Chicken Spread

INGREDIENTS:
2 cups chopped cooked chicken
1/2 cup mayonnaise
1/2 medium onion, chopped
1 clove of garlic, mashed
1/8 teaspoon ground cumin
1/2 cup chopped black olives
salt and freshly ground pepper to taste
Combine chicken and mayonnaise in a food processor and process until coarsely chopped.

Add garlic and cumin and blend well.

Fold in onions and black olives.

Salt and pepper to taste.
