Pasta de Carne y Queso
Cuban Meat and Cheese Spread

Glenn: This is one of many "bocaditos" or little bites.

Raúl: These little "snacks" are served as appetizers at Cuban parties.

Glenn: Pastes like this are a traditional spread served on crackers.

Jorge: You also might use them as a filling in Cuban meat pastries or in croquetas.

2 (8 ounce) packages cream cheese
8 ounces leftover beef roast
8 ounces smoked ham
8 ounces cooked turkey breast
4 ounces sharp cheddar cheese, shredded
4 tablespoons butter
4 tablespoons mayonaisse
1 tablespoon prepared yellow mustard
1 teaspoon cumin
2 teaspoons garlic powder
1 large red pepper, roasted, cooled and diced
1/2 cup chopped black olives
Salt and pepper to taste

Let cream cheese come to room temperature.

Grind the meats in a food processor until chopped fine. Add cheese, cream cheese, butter, mayonaisse, mustard, cumin and garlic powder. Blend well. Fold in chopped olives and roasted red pepper. Add salt and pepper to taste.

Refrigerate several hours. Serve on crackers or bread.
