 Coconut Cookies

A Marlen Roth Legacy Recipe

Glenn: Coconut sure shows up a lot in Cuban desserts!

Jorge: Gee, I wonder why!

Glenn: This recipe for coconut cookies includes corn flakes. The flakes really make for a crisp and crunchy cookie.

Jorge:It's rumored that these cookies may act as an aphrodisiac, so eat a couple with someone you love!

2 egg whites
1 cup granulated white sugar
2 cups corn flakes
1/2 cup chopped walnuts
1 cup shredded coconut
1/2 teaspoon vanilla extract
Preheat oven to 325ºF.

Beat the egg whites until creamy. Add the sugar little by little and follow with the rest of the ingredients until all is well mixed.

Drop by teaspoonfuls on a greased cookie sheet. Bake 15 to 20 minutes. Remove from cookie sheet immediately after they come out of the oven.

Serves: Makes approximately 36 torticas.

Note: Sometimes I drizzle melted chocolate over the cookies.

Three Guys From Miami: Food, Travel, & Culture

This painting represents the dual culture of Cuban-Americans here symbolized by both the traditional espresso coffee pot -- for those cafe con leches -- and the ubiquitous American drip coffee maker, which is found in offices, work sites, and most American homes.

Tony has sold many of these at art shows around Florida. It is especially popular with Cuban-Americans who live this dual culture. Also a great gift for Cubans married to Americans!
