Glenn Lindgren: Coconut sure shows up a lot in Cuban desserts! Jorge Castillo: Gee, I wonder why! Glenn Lindgren: This recipe for coconut cookies includes corn flakes. The flakes really make for a crisp and crunchy cookie. Jorge Castillo:It's rumored that these cookies may act as an aphrodisiac, so eat a couple with someone you love! |

Preheat oven to 325ºF.
Beat the egg whites until creamy. Add the sugar little by little and follow with the rest of the ingredients until all is well mixed. Drop by teaspoonfuls on a greased cookie sheet. Bake 15 to 20 minutes. Remove from cookie sheet immediately after they come out of the oven. Serves: Makes approximately 36 torticas. Note: Sometimes I drizzle melted chocolate over the cookies. |
