Raúl: Still, we did eat plenty of vegetables in Cuba -- especially salads.
Jorge: Here is one recipe where the lowly green bean is the star.
Green beans make a rare appearance in the Cuban diet.
INGREDIENTS:
2 cups green beans trimmedRemove from heat and drain.
Sauté the bacon and onion in olive oil until the onions begin to get limp and the bacon starts to crisp. Add crushed garlic and cook for two additional minutes.
Remove from heat.
Stir in fresh lime juice.
Toss the cooked green beans and pan juices to coat evenly. Sprinkle chopped fresh cilantro on top and serve.
