Three Guys From Miami: Cuban and Spanish Food Recipes

Glenn Lindgren: This is one of many "bocaditos" or little bites.

Raúl Musibay: These little "snacks" are served as appetizers at Cuban parties.

Glenn Lindgren: Pastes like this are a traditional spread served on crackers.

Jorge Castillo: You also might use them as a filling in Cuban meat pastries or in croquetas.

Cuban Meat & Cheese Spread -- Pasta de Carne y Queso

By Three Guys From Miami

Prep time: 10 minutes
Total time: 10 minutes
Yield: 4-6 servings

An all-purpose meat and cheese spread for crackers and fried bread rounds.

INGREDIENTS:

2 (8-ounce) packages Cream cheese
8 ounces leftover beef roast
8 ounces cooked turkey breast
8 ounces ground ham
8 ounces sharp cheddar cheese, shredded
4 tablespoons butter
4 tablespoons mayonaisse
1 large red pepper,roasted, cooled and diced
1/2 cup black olives, chopped
salt and pepper to taste

Let cream cheese come to room temperature.

Grind the meats in a food processor until chopped fine. Add cheese, cream cheese, butter, mayonaisse, mustard, cumin and garlic powder. Blend well. Fold in chopped olives and roasted red pepper. Add salt and pepper to taste.

Refrigerate several hours. Serve on crackers or bread.
