Three Guys From Miami: Cuban and Spanish Food Recipes

Jorge Castillo: An Eggnog-type beverage was a common holiday drink in Cuba. However, the drink we enjoyed there was called Crema de Vie.

Raúl Musibay: American-style eggnog has become popular with Miami Cubans. The stores are filled with prepared eggnog from Thanksgiving through New Years.

Glenn Lindgren: Why not make your own, freshly prepared eggnog for a real treat? To blend the tastes of both cultures, we created a Cuban/American style crema de vie.

Jorge Castillo: Back in the good old days, we never worried about using fresh eggs in a recipe. However, today we only use pasteurized eggs in this recipe.

Raúl Musibay: Alcohol kills a lot of things, but you can't expect it to take care of everything.

Glenn Lindgren: Besides, our eggnog is kid friendly. Everyone can enjoy this delicious eggnog!

Crema de Vie - Cuban Eggnog


Crema de Vie -- Cuban Eggnog

Yield: 12 servings

The Cuban version of eggnog -- a must for your holiday parties!

INGREDIENTS:

10 pasteurized egg yolks
2 cups sugar
1 (14-ounce) can sweetened condensed milk
1 (14-ounce)can condensed milk
2 cups whole milk
1 cup heavy cream
1 teaspoon vanilla extract
1 teaspoon rum extract
dark rum (see instructions)
NOTE: You must use pasteurized eggs for this and any other eggnog recipe! The eggs are not cooked and you cannot rely on the alcohol to eliminate any nasty bugs!

Use an electric mixer to cream the sugar and egg yolks together. Gradually add the sweetened condensed milk and one cup of whole milk.

Beat for a minute or two to dissolve the sugar.

Add the rest of the milk, the cream, the vanilla, and the rum extract. Beat until the mixture is thick and frothy. Garnish with a dusting of nutmeg and serve immediately.

Rum: Many people like to make this drink with a lot of rum! We prefer to serve the eggnog in decorative cups adding a shot of Bacardi rum to each cup, stirring thoroughly. This way the kids and those who don't drink alcohol can also enjoy this delicious drink!
