Three Guys From Miami: Cuban and Spanish Food Recipes

Glenn Lindgren: This is Raúl's favorite way to do potatoes on the grill.

Jorge Castillo: It's his favorite accompaniment to Salmon de Raúl. The bacon gives the potatoes a nice smoky flavor.

Glenn Lindgren: It also helps keep the skins moist.

Jorge Castillo: We like to quarter and slightly smash the cooked potatoes after they are done.

Glenn Lindgren: Sprinkle them with a little olive oil or butter and fresh chopped cilantro. Delicious.


Papas con Tocino -- Baked Potatoes with Bacon

By Three Guys From Miami



Prep time: 15 minutes
Cook time: 1 hour
Total time: 1 hour 15 minutes
Yield: 6-8 servings

Raúl's favorite way to do potatoes on the grill -- with bacon!

INGREDIENTS:

6-8 large potatoes, washed
8 strips hickory-smoked bacon
3 tablespoons olive oil
2 tablespoons chopped cilantro
salt and pepper to taste
Clean each potato thoroughly. Wrap each potato with a strip of bacon. Wrap in foil.

Place foil-wrapped potatoes on the grill and cook until fork tender, 45 minutes to one hour. Move potatoes occasionally to cook evenly.

Remove from foil and quarter. Sprinkle potatoes with olive oil, and fresh chopped cilantro. Salt and pepper to taste.
